Why would I notice a big difference in how long a dental x-ray machine is on?

At my regular dentist, I hear it "buzz" for only a fraction of a second, but when I went to a periodontist for a root canal, the machine was "buzzing" for several seconds. Why would there be such a difference?

I think you went to an endodontist for the root canal (RCT). Maybe he used a CBCT machine?
The buzz on my standard Xray machine lasts much longer than the actual exposure time to ensure that the button is held down long enough.
